PROGRAM COOKING HOLIDAYS in APULIA

Day 1
Arrival and accommodation in the Masseria (manor farm), welcome cocktail, Visit to the Masseria with the tale of the Story of Rural life in the Manor Farms of Salento.

Salentine Cuisine

Cooking class on typical dishes of the Salentine Cuisine, accompanied by the Chefs of the Masseria in order to acquire the techniques and methodologies of the traditional Salentine and Mediterranean rural cuisine, with evidence of local dishes and healthful elements thereof.

Relax in the Swimmingpool Area of the Masseria,

Day 2

Hearty breakfast in the Masseria and soon after:

Transfer to visit the Byzantine Crypt of Carpignano Salentino and departure to Otranto, with a visit to the Cathedral of the Holy Martyrs and to the Castle. Return

Lunch at the Masseria.

Afternoon: walk outdoors in the Pineta

Learn kneading: Preparation of bread or traditional sweets, with the possibility of using the antic oven of the year 1700 for baking the said products like in the past: pucce, frisellepiscialette“, cuddure, or preparation of homemade pastries of the rural tradition with positions in which to mix the ingredients, knead and extract the shapes of traditional bread, cakes and pastries.

Cooking class accompanied by the Chefs of the Masseria in order to acquire the techniques and methodologies of the traditional Salentine and Mediterranean rural cuisine, with evidence of local dishes and healthful elements thereof.

Relax in the Swimmingpool Area of the Masseria, (Let’s idle a little together!)

Lunch at the Masseria

Transfer to visit Lecce and the Acaya Castle.

Departure by coach to Lecce, the southern Italian city of art, known as the “Florence of the South” or the “Florence of the Baroque“: the ancient Messapian origins and the archaeological remains of Roman rule mingle, indeed, with the richness and exuberance of the Baroque (typically of the seventeenth century) of the downtown churches and buildings.

The architectural development and the decorative enrichment of the facades was particularly fruitful during the Kingdom of Naples and characterized the city in such an original way so as to give rise to the definition of Baroque of Lecce; during the visit, great importance have the many workshops of the renowned cartapestai (papier-mâché moulders) of Lecce.

After visiting Lecce, we will head for the Acaya Castle; the castle is located a few miles away from the Adriatic coast of Salento, not far away from Lecce and Vernole, of which Acaya is a fraction.

This fortress is among the most innovative and better cared for of the whole “Kingdom of Naples”; in fact, its Planner was one of the most popular military architects of the sixteenth century.

At the end of the excursion

In the exterior: typical dinner of Salento based on fish and truffles, cooked in a special pot called the “Pendulum“. Peculiarity: spaghetti are cooked in a uniform manner together with the ingredients without being previously parboiled into water.

Return to the Masseria and overnight.

Departure back to the airport.
