Parma is a wonderful town with the relaxed pace of Emilia Romagna, which lies at the heart of the so-called Food Valley comprising Parma, Reggio Emilia, Modena and Bologna. From a culinary point of view, it is well known for Parmesan cheese and Parma ham as well as Zibello Culatello, Felino salami, the shoulder of San Secondo, the mushrooms of Borgotaro … a great number of well-known local products of the purest quality originating from a land which provides matchless raw material that is later shaped by a centuries old tradition.
Parma Airport is linked to London by Ryanair with 3 flights per week: Tuesday, Thursday and Saturday.
Our Master Class takes place in the kitchen of a restaurant located in the city center. The property is made available to those learners working together with the Chef Salvatore Palatino. The restaurant is attached to a splendid wine cellar open to visitors, which boasts 12,000 bottles with 1,800 different wines.
The first day, we will visit the city market and will proceed to the purchase of raw materials.
Each day consists in preparing 5 courses:
– First course
– Second Course
– Side Dish
After the working session, we can taste the work done by matching a different wine for each course with an indication of origin, grape variety, and an indication of their characteristics.
The whole restaurant and kitchens will be totally available to learners from 9 am till 4 pm.
The basic proposal comprises a 4-day Course in which you will get culinary experiences of High Italian cuisine that will be combined with a three-hour guided city tour to explore the city, visit its monuments, do the shopping in a town grocery store of cold meats and learn about a local restaurant.
The price of the Master Class depends on the number of participants:
4 people 740£ / pax
from 5 to 6 people 580£ / pax
from 7 to 8 people 520£ / pax
This does not include accommodation, breakfast and supper.
For overnight stays, we offer the possibility to use the convention we have with a convenient and comfortable four-star hotel just 500 mt away from the restaurant. The price is 75€ for a double room and 60€ for a single room, always including breakfast.

Between October and November is held the Festival Verdi Opera by composer Giuseppe Verdi
EXTRA DAY – VISIT TO THE FOOD VALLEY
including lunch, transfers and English-speaking tour guide
An extra day to visit a plant for the production of grana Padano cheese
and a plant for the drying of Parma ham
visit to a vinegar factory for the production of Balsamic Vinegar
The day includes transfer by minibus, tour and tasting in the plants as well as a stop for some photos of the picturesque medieval hamlet of Torrechiara dominated by its romantic castle, the fairest of the Castles of the Duchy of Parma and Piacenza;
for lunch: delicious tasting of local products in a fascinating winery producing DOC wines of “Colli di Parma” including Lambrusco and Malvasia;
Afternoon transfer to the Province of Modena for a visit to a real vinegar factory
with its barrels of Traditional Balsamic Vinegar of Modena. Tasting at the end of the visit and return to Parma in the afternoon.
EXTRA DAY – SIGHTSEEING TOUR TO THE CINQUE TERRE
including all transfers by train, the transfer by boat, an English-speaking guide and lunch
Once in Riomaggiore joined by a tour escort we will walk along the magnificent trails above the sea,
we’ll make part of the way aboard a boat
we’ll have lunch at a local restaurant where they will serve us seafood.
and we will head back by the small train overlooking the sea
